Mechanism: (350 words)
• Provide an explanation for the scientific observations and data i.e. you must explain why the
scientific data you present is observed; e.g. Data indicates that heat darkens honey; the
mechanism is the chemical reaction which occurs when honey is heated, which result in the
breakdown of sugar to a brown-coloured compound.
• How much you can say about mechanism will vary considerably depending on the food and
topic you have selected; for some topics a great deal of basic research has been done; on others
very little; but even when little has been done, you should be able to include at least some
discussion of mechanism, even if only a few sentences. If you cannot find any information on
mechanisms related to the food you have selected, be sure to indicate this in your text and
consider making analogies to other products where research is available, and/or speculate and
generate your own hypotheses.
